1 lb ground turkey

2 cups mixed vegetables (broccoli, bell peppers, carrots, and snap peas)

2 tablespoons vegetable oil

4 cloves garlic, minced

1 inch ginger, grated

1/4 cup soy sauce (low sodium preferred)

2 tablespoons teriyaki sauce

1 tablespoon honey or maple syrup

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 tablespoon sesame seeds (for garnish)

3 green onions, sliced (for garnish)

Salt and pepper to taste

Cooked rice or quinoa (for serving)

Instructions
 

Prepare the Sauce: In a small bowl, whisk together soy sauce, teriyaki sauce, honey (or maple syrup), rice vinegar, and sesame oil. Set aside.

    Cook the Turkey: In a large skillet or wok, heat vegetable oil over medium-high heat. Add the ground turkey and cook until browned and cooked through, breaking it up with a spatula as it cooks (about 5-7 minutes). Season with salt and pepper.

      Add Aromatics: Once the turkey is cooked, add minced garlic and grated ginger to the skillet. Stir and cook for 1 minute until fragrant.
