1 lb ground beef (80/20 blend for juiciness)

2 cloves garlic, minced

1 tsp onion powder

1 tsp dried oregano

1 tsp dried thyme

1/2 tsp ground cumin

1/2 tsp paprika

1/4 tsp cayenne pepper (optional for heat)

Salt and pepper to taste

1 tbsp olive oil

4 large pita breads

1 cup Greek yogurt

1 tbsp lemon juice

1 cup cucumber, diced

1 cup tomatoes, diced

1/2 red onion, thinly sliced

Fresh parsley or dill for garnish

Prepare the Beef Mixture: In a large mixing bowl, combine the ground beef with minced garlic, onion powder, oregano, thyme, cumin, paprika, cayenne pepper (if using), salt, and pepper. Mix well with your hands or a spoon until fully combined.

    Cook the Beef: Heat the olive oil in a skillet over medium heat. Add the seasoned ground beef to the skillet. Cook for 8-10 minutes, breaking up the meat with a spatula until browned and fully cooked through. Drain any excess fat.

      Make the Tzatziki Sauce: In a separate bowl, combine Greek yogurt, lemon juice, and diced cucumber. Stir to combine and season with salt and pepper to taste. Set aside in the refrigerator to chill.

        Warm the Pita: While the beef is cooking, warm the pita breads in a dry skillet over low heat for about 1-2 minutes on each side or until soft and pliable.

          Assemble the Gyros: Take a warm pita, add a generous scoop of the ground beef mixture, followed by diced tomatoes, sliced red onion, and a spoonful of the tzatziki sauce. Garnish with chopped parsley or dill.
