Ingredients

For the Salmon Skewers:

1 pound fresh salmon fillet, skin removed and cut into 1-inch cubes

2 tablespoons olive oil

2 tablespoons fresh lemon juice

2 garlic cloves, minced

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

For the Creamy Dill Yogurt Sauce:

1 cup plain Greek yogurt

2 tablespoons fresh dill, chopped

1 tablespoon fresh lemon juice

1 teaspoon garlic powder

Salt and pepper to taste

Instructions

Prepare the Marinade: In a bowl, mix together olive oil, lemon juice, minced garlic, smoked paprika, salt, and pepper. Add the salmon cubes and gently toss to coat. Let marinate for 15-30 minutes.

Make the Creamy Dill Yogurt Sauce: In a separate bowl, combine Greek yogurt, chopped dill, lemon juice, garlic powder, salt, and pepper. Stir well to combine. Adjust seasoning to taste and refrigerate until ready to use.

Preheat the Grill: Preheat your grill (or grill pan) to medium-high heat.

Skewering the Salmon: Thread marinated salmon cubes onto skewers, leaving a little space between each piece for even cooking. If using wooden skewers, soak them in water for 30 minutes beforehand to prevent burning.

Grill the Skewers: Place the skewers on the preheated grill. Cook for about 3-4 minutes on each side, or until the salmon is cooked through and has nice grill marks.

Serve: Remove the skewers from the grill, garnish with fresh parsley, and serve with lemon wedges and the creamy dill yogurt sauce on the side.
