1.5 lbs flank steak

2 tablespoons olive oil

2 teaspoons garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

2 medium tomatoes, diced

1 red bell pepper, diced

1 yellow bell pepper, diced

1 small red onion, finely chopped

1 jalapeño, deseeded and minced

Juice of 1 lime

2 tablespoons fresh cilantro, chopped

Marinate the Flank Steak: In a small bowl, mix the olive oil, garlic powder, smoked paprika, salt, and pepper. Rub this marinade all over the flank steak and allow it to marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator.

    Prepare the Salsa: In a separate bowl, combine the diced tomatoes, red and yellow bell peppers, red onion, jalapeño, lime juice, and cilantro. Mix well and season with salt and pepper to taste. Set aside to let the flavors meld together.
