4 slices of sourdough bread

6 oz Gouda cheese, sliced

1 cup mushrooms, sliced (shiitake or cremini preferred)

1 medium onion, thinly sliced

2 tablespoons olive oil

1 teaspoon fresh thyme, chopped

Salt and pepper to taste

2 tablespoons butter

Instructions
 

Roast the Mushrooms and Onions: In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and sauté until soft and caramelized, about 5-7 minutes. Toss in the sliced mushrooms and continue to sauté for another 5 minutes until the mushrooms are browned. Season with fresh thyme, salt, and pepper. Remove from heat and set aside.

    Prepare the Bread and Cheese: Place 2 slices of sourdough bread on a clean surface. Layer a generous portion of Gouda cheese on each slice.

      Add Mushroom & Onion Mixture: Spoon the sautéed mushroom and onion mixture evenly over the cheese on both slices. Top with the remaining Gouda cheese slices.

        Assemble the Sandwich: Place the other 2 slices of sourdough bread on top, creating two sandwiches filled with the savory mixture.

          Grill the Sandwiches: In the same skillet, melt 1 tablespoon of butter over medium heat. Once melted, place one sandwich in the skillet. Cook for 3-4 minutes, or until the bread is golden brown. Carefully flip the sandwich, adding the remaining butter for the second side, and grill for another 3-4 minutes until the cheese is melted and the bread is golden.

            Serve: Remove from the skillet and let it sit for a minute. Slice the sandwiches diagonally and serve warm.
