Grilled Cheese Hot Dogs

4 hot dog sausages

4 slices of your favorite bread (sourdough or brioche work great)

1 cup shredded cheddar cheese

4 tablespoons butter

1 tablespoon mustard (optional)

1/4 cup chopped pickles or jalapeños (for an extra kick)

Salt and pepper to taste

Instructions
 

Preheat your grill or grill pan over medium heat.

    Cook the hot dogs on the grill until they are heated through and have nice grill marks, about 5-7 minutes, turning occasionally.

      While the hot dogs are grilling, assemble the grilled cheese. Take two slices of bread for each sandwich and spread about a tablespoon of butter on one side of each slice.

        On the non-buttered side of the first slice, add a good sprinkle of shredded cheddar cheese, and place the hot dog on top of the cheese. Add pickles or jalapeños if using, and top with more cheese before placing the second slice of bread on top (buttered side facing out).

          Heat a skillet or a griddle over medium heat and carefully place the sandwich in the pan. Cook until golden brown and the cheese begins to melt, about 3-4 minutes on each side.

            Once golden brown and crispy on both sides, remove from the skillet and cut in half. Repeat the process for the remaining hot dogs.

              If desired, spread mustard on the inside of the sandwich for added flavor.

                Season with salt and pepper to taste before serving.
