5 medium green apples, cored and diced

1 cup granulated sugar

1 cup water

1 tablespoon lemon juice

1 teaspoon cinnamon powder

1/2 teaspoon vanilla extract

Pinch of salt

Instructions
 

In a medium saucepan, combine the diced apples, water, and lemon juice. Bring the mixture to a gentle boil over medium heat.

    Once boiling, reduce the heat to low and cover the saucepan. Let it simmer for about 15 minutes, or until the apples have softened.

      After the apples are cooked, use an immersion blender to puree the mixture until smooth. If you don’t have an immersion blender, transfer the mixture to a blender and blend in batches.

        Strain the puréed mixture through a fine sieve or cheesecloth into a clean saucepan to remove the apple solids, pressing down to extract as much liquid as possible.

          Add the sugar, cinnamon, vanilla extract, and a pinch of salt to the apple juice in the saucepan. Stir well to combine.

            Bring the mixture to a boil again over medium heat, stirring frequently. Let it boil for 5-7 minutes until the syrup thickens slightly.

              Remove the saucepan from heat and allow the syrup to cool to room temperature. It will continue to thicken as it cools.

                Once cooled, transfer the syrup to a clean glass bottle or jar and store it in the refrigerator.
