1 lb pizza dough (store-bought or homemade)

2 tablespoons olive oil

6 cloves garlic, roasted

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1/2 cup feta cheese, crumbled

1 teaspoon dried oregano

Freshly ground black pepper, to taste

Salt, to taste

1/4 cup Kalamata olives, sliced (optional)

1 tablespoon lemon juice

Fresh basil leaves, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 475°F (245°C) or as high as it will go for optimal pizza cooking.

    Prepare the Pizza Dough: If using store-bought dough, follow the instructions for best results. Roll out the pizza dough on a floured surface to your desired thickness. Transfer it to a pizza stone or a baking sheet lined with parchment paper.

      Prepare Roasted Garlic: If you haven't done so already, roast the garlic. Preheat the oven to 400°F (200°C), wrap the garlic cloves in aluminum foil, and roast for about 30 minutes, until soft and caramelized. Let them cool, then mash them into a paste.

        Mix the Cheese: In a medium bowl, combine the ricotta cheese, half of the mozzarella cheese, lemon juice, oregano, salt, and pepper. Blend until smooth.

          Assemble the Pizza: Spread the ricotta mixture evenly over the rolled-out pizza dough. Drizzle the mashed roasted garlic across the cheese mixture. Sprinkle the fresh spinach on top, then add the remaining mozzarella and crumbled feta. If using, scatter the Kalamata olives over the pizza.

            Bake the Pizza: Place the pizza in the preheated oven and bake for 12-15 minutes, or until the crust is golden and the cheese is bubbly and slightly browned.

              Garnish and Serve: Once baked, remove the pizza from the oven and let it cool for a minute. Garnish with fresh basil leaves and an additional drizzle of olive oil if desired. Slice and serve hot.
