Greek Chicken Gyros with Homemade Tzatziki

3 tablespoons olive oil

2 teaspoons dried oregano

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon paprika

Salt and pepper to taste

4 pita breads

Sliced tomatoes

Shredded lettuce

Sliced red onion

For the Homemade Tzatziki:

1 cup Greek yogurt

½ cucumber, grated and drained

2 cloves garlic, minced

1 tablespoon lemon juice

1 tablespoon fresh dill, chopped

Salt and pepper to taste

Marinate the Chicken: In a bowl, combine olive oil, oregano, garlic powder, onion powder, paprika, salt, and pepper. Add the chicken thighs and coat well. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

    Prepare the Tzatziki: In another bowl, mix the Greek yogurt, grated cucumber (ensure it's well-drained), minced garlic, lemon juice, dill, salt, and pepper. Stir until combined. Adjust seasoning to taste. Chill in the refrigerator until serving.

      Cook the Chicken: Preheat a grill pan or skillet over medium-high heat. Cook the marinated chicken thighs for about 6-7 minutes on each side or until fully cooked and golden brown. Remove from heat and let rest for a few minutes.
