Greek Chicken Gyros with Cucumber Tzatziki

Ingredients
  

For the Chicken Gyros:

1 lb (450g) boneless skinless chicken thighs

3 tablespoons olive oil

3 cloves garlic, minced

1 tablespoon dried oregano

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon red wine vinegar

Juice of 1 lemon

4 pita bread or wraps

Fresh parsley, chopped (for garnish)

Sliced tomatoes and red onions (for serving)

For the Cucumber Tzatziki:

1 cup Greek yogurt

1 small cucumber, grated and excess water squeezed out

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon white wine vinegar

1 tablespoon fresh dill, chopped

Salt and black pepper to taste

Instructions
 

Marinate the Chicken:

    In a bowl, combine olive oil, minced garlic, oregano, cumin, smoked paprika, salt, pepper, red wine vinegar, and lemon juice. Add the chicken thighs and coat them well in the marinade. Cover and let marinate in the refrigerator for at least 1 hour, preferably overnight for maximum flavor.

      Prepare the Tzatziki:

        In a mixing bowl, whisk together the Greek yogurt, grated cucumber (make sure to squeeze out excess moisture), minced garlic, olive oil, white wine vinegar, and fresh dill. Season with salt and pepper to taste. Store in the refrigerator until ready to serve.

          Cook the Chicken:

            Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill for about 5-7 minutes on each side, or until fully cooked and golden brown. Take it off the heat and let it rest for a few minutes before slicing it into strips.

              Assemble the Gyros:

                Warm the pita bread on the grill or in a dry skillet for about 1 minute on each side. Place the sliced chicken on the pita, followed by sliced tomatoes, red onions, and a generous dollop of cucumber tzatziki. Garnish with fresh parsley.

                  Serve:

                    Wrap the gyros loosely with parchment paper or serve open-faced. Enjoy with extra tzatziki on the side and your favorite sides like Greek salad or roasted potatoes.
