¾ cup granulated sugar

¼ cup brown sugar

3 large eggs

1 teaspoon ground cinnamon

1 cup sour cream

3 medium Granny Smith apples, peeled and diced

½ cup brown sugar

1 teaspoon ground cinnamon

2 tablespoons unsalted butter

½ cup caramel sauce (store-bought or homemade)

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (160°C) with a rack positioned in the center.

    Make the Crust: In a medium mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until well combined.

      Press the mixture into the bottom of a 9-inch springform pan evenly to form the crust. Bake in the preheated oven for 10 minutes, then remove and let it cool.

        Prepare the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

          Gradually add the granulated sugar and brown sugar, mixing until well incorporated. Add the eggs one at a time, blending well after each addition. Mix in the vanilla extract, ground cinnamon, and sour cream until fully combined and smooth.

            Bake the Cheesecake: Pour the cheesecake filling over the cooled crust in the springform pan. Smooth the top with a spatula.

              Bake for 50-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and crack the door to allow the cheesecake to cool slowly for 1 hour. Then refrigerate for at least 4 hours or overnight for best results.
