2 tbsp olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

8 oz mushrooms, sliced (preferably cremini)

1 tsp paprika

1 cup beef broth

1 tbsp Dijon mustard

1 cup sour cream

2 tbsp Worcestershire sauce

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

8 oz egg noodles or tagliatelle

Grated Parmesan cheese (optional, for serving)

Instructions
 

Cook the Noodles: Bring a large pot of salted water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Beef: In a large skillet, heat the olive oil over medium-high heat. Add the thinly sliced beef and season with salt and pepper. Cook for about 2-3 minutes until browned but not fully cooked through. Remove the beef from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the chopped onion and sauté for about 2-3 minutes until softened. Add the minced garlic and sliced mushrooms, cooking for another 4-5 minutes until the mushrooms are tender.

        Add the Flavor: Sprinkle in the paprika, and stir to combine. Pour in the beef broth and Worcestershire sauce, scraping up any browned bits from the bottom of the skillet. Bring the mixture to a simmer.

          Combine Ingredients: Stir in the Dijon mustard and let the sauce simmer for 3-4 minutes to reduce slightly. Lower the heat and mix in the sour cream until well combined. Return the beef to the skillet and cook for an additional 2-3 minutes until the beef is heated through.

            Serve: Toss the cooked noodles with the beef stroganoff mixture until well coated. Serve hot, garnished with fresh chopped parsley and grated Parmesan if desired.
