Ingredients

20 Golden Oreo cookies, crushed

4 tablespoons unsalted butter, melted

8 oz (1 package) cream cheese, softened

1/2 cup granulated sugar

1 teaspoon vanilla extract

1 large egg

1 cup fresh strawberries, hulled and diced

1/2 cup whipped cream (store-bought or homemade)

Additional Golden Oreo crumbs for topping (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal.

Prepare the Crust: In a bowl, mix the crushed Golden Oreos with the melted butter until well combined. Press this mixture firmly into the bottom of the prepared baking dish to form an even layer. Bake for 10 minutes, then remove from the oven and allow it to cool slightly.

Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with the granulated sugar until smooth and creamy. Add the vanilla extract and egg; mix until just combined and smooth, taking care not to overmix.

Fold in Strawberries: Gently fold in the diced strawberries and whipped cream into the cheesecake mixture until evenly distributed.

Assemble the Bars: Pour the cheesecake filling over the cooled crust, spreading it into an even layer.

Bake: Bake in the preheated oven for about 25-30 minutes, or until the edges are set and the center slightly jiggles.

Cool and Chill: Remove from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours, or overnight for best results.

Cut and Serve: Using the parchment overhang, lift the cheesecake from the baking dish. Cut into bars and sprinkle additional Golden Oreo crumbs on top if desired.

Prep Time: 15 minutes | Total Time: 4 hours 45 minutes | Servings: 9 bars

                    - Presentation Tips: Serve each bar on a decorative plate, garnished with a fresh strawberry on the side for a pop of color.
