Ingredients
  

1 lb chicken breast, diced

1 cup potato gnocchi

1 medium onion, diced

2 cloves garlic, minced

1 cup carrots, diced

1 cup celery, diced

1 cup frozen peas

4 cups chicken broth

1 cup heavy cream

2 tbsp olive oil

1 tsp dried thyme

1 tsp dried rosemary

Salt and pepper, to taste

1 pre-made pie crust (or puff pastry)

1 egg, beaten (for egg wash)

Instructions
 

Cook the Chicken: In a large pot, heat olive oil over medium heat. Add the diced chicken breast, season with salt and pepper, and sauté until the chicken is golden brown (about 5-7 minutes). Remove from the pot and set aside.

    Sauté the Aromatics: In the same pot, add the diced onion, garlic, carrots, and celery. Cook until the vegetables are soft, approximately 5-6 minutes.

      Create the Sauce: Pour in the chicken broth and bring to a simmer. Stir in the heavy cream, thyme, and rosemary. Allow the mixture to thicken for about 5 minutes.

        Combine the Ingredients: Add the cooked chicken back into the pot along with the frozen peas and potato gnocchi. Stir gently and let it simmer for an additional 5 minutes, until the gnocchi is cooked through. Adjust seasoning with salt and pepper as needed.

          Prepare the Pie: Preheat the oven to 400°F (200°C). Transfer the mixture to a pie dish, ensuring it’s evenly spread. Cover with the pie crust or puff pastry, trimming any excess, and gently press the edges to seal. Cut a few slits in the top to allow steam to escape.

            Bake: Brush the top of the crust with the beaten egg for a golden finish. Place in the preheated oven and bake for 25-30 minutes, or until the crust is golden brown and crispy.

              Serve: Allow the pie to cool slightly before serving. Cut into wedges and enjoy this cozy and comforting meal!
