2 medium apples (preferably Granny Smith or Honeycrisp), peeled, cored, and diced

1 cup all-purpose flour

1/2 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup buttermilk

1 large egg

2 tablespoons melted butter

Vegetable oil (for frying)

1 cup powdered sugar

3 tablespoons milk

1 teaspoon vanilla extract

Begin by placing the diced apples in a bowl and sprinkling them with a teaspoon of sugar and a dash of cinnamon. Set aside for about 10 minutes to macerate.

    In a medium bowl, whisk together the flour, granulated sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.

      In another bowl, mix the buttermilk, egg, and melted butter until smooth.

        Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Gently fold in the diced apples until they are evenly distributed.

          Heat about 2 inches of vegetable oil in a deep pot over medium heat until it reaches 350°F (175°C).

            Using a small cookie scoop or spoon, carefully drop tablespoon-sized portions of the fritter mixture into the hot oil, being careful not to overcrowd the pot.
