4 cod fillets (about 6 ounces each)

1/4 cup low-sodium soy sauce

2 tablespoons fresh ginger, minced

2 tablespoons honey or maple syrup

1 tablespoon sesame oil

2 cloves garlic, minced

1 tablespoon rice vinegar

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Salt and pepper to taste

Olive oil for cooking

Prepare the Marinade: In a bowl, whisk together the soy sauce, minced ginger, honey (or maple syrup), sesame oil, minced garlic, and rice vinegar until well combined.

    Marinate the Cod: Place the cod fillets in a shallow dish or resealable plastic bag, pour the marinade over them, and allow them to marinate for at least 30 minutes in the fridge. If you have more time, marinating for 1-2 hours will enhance the flavors further.

      Preheat Pan: Heat a non-stick skillet over medium heat and add a small drizzle of olive oil.

        Cook the Cod: Remove the cod from the marinade (reserve the marinade) and sprinkle each fillet with salt and pepper. Place the fillets skin-side down in the heated skillet. Cook for about 4-5 minutes, until the skin is crispy.

          Flip and Glaze: Carefully flip the cod fillets and pour the reserved marinade over them. Cook for an additional 3-4 minutes, basting the fillets with the sauce, until the cod is opaque and flakes easily with a fork.

            Serve: Remove the skillet from heat and transfer the cod fillets to a serving platter. Drizzle any remaining sauce from the pan over the top.

              Garnish: Sprinkle the cod with chopped green onions and sesame seeds for a fresh finish.
