400g spaghetti or tonnarelli

200g Pecorino Romano cheese, finely grated

Freshly cracked black pepper, to taste

Salt, for pasta water

1 cup reserved pasta cooking water

Instructions
 

Cook the Pasta: In a large pot, bring water to a boil and generously season with salt. Add the spaghetti or tonnarelli and cook until al dente, according to package instructions. Reserve 1 cup of the pasta cooking water before draining the pasta.

    Prepare the Cheese and Pepper: While the pasta cooks, in a large bowl, combine the finely grated Pecorino Romano cheese and a generous amount of freshly cracked black pepper. Mix well to create a cheese-pepper blend.

      Combine Pasta and Cheese: Once cooked, add the drained pasta to the bowl with the cheese and pepper mixture. Toss quickly to coat the pasta thoroughly, allowing the residual heat to melt the cheese and form a creamy sauce.

        Adjust the Consistency: Gradually add the reserved pasta cooking water a little at a time, continuing to toss until a creamy consistency is achieved. You may need less or more water, so add it slowly to get the desired sauciness.

          Serve and Garnish: Taste and adjust seasoning if necessary. Plate the pasta and sprinkle additional Pecorino Romano cheese and freshly cracked black pepper on top for an extra kick. Serve immediately!
