German Potato Soup Recipe

4 large Yukon Gold potatoes, peeled and diced

1 medium onion, chopped

2 cloves garlic, minced

3 carrots, sliced

2 stalks celery, chopped

4 cups vegetable broth

1 cup heavy cream

2 tablespoons olive oil

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing for about 3-4 minutes until the onion is translucent.

    Add the diced potatoes, sliced carrots, and chopped celery to the pot. Stir well to combine all the vegetables.

      Pour in the vegetable broth, ensuring that the vegetables are fully submerged. Bring the mixture to a boil, then reduce the heat to a simmer. Add the thyme.

        Cover the pot and let it simmer for about 20-25 minutes, or until the potatoes and carrots are tender.

          Once the vegetables are cooked, use an immersion blender to puree the soup to your desired consistency (smooth or chunky). If you don’t have an immersion blender, you can carefully transfer the soup in batches to a regular blender.

            Return the soup to the pot (if transferred) and stir in the heavy cream. Heat through but do not boil. Season with salt and pepper to taste.

              Serve the soup hot, garnished with fresh chopped parsley.
