Ingredients
  

1 medium head of cauliflower, cut into florets

8 oz (about 225 g) of button or cremini mushrooms, halved

6 cloves of garlic, minced

4 tablespoons olive oil

1 teaspoon smoked paprika

½ teaspoon red pepper flakes (optional)

Salt and pepper, to taste

2 tablespoons fresh parsley, chopped (for garnish)

Zest of 1 lemon

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Vegetables: In a large mixing bowl, combine the cauliflower florets and halved mushrooms.

      Add Garlic & Seasonings: In a separate small bowl, mix minced garlic, olive oil, smoked paprika, red pepper flakes (if using), salt, and pepper. Pour this mixture over the cauliflower and mushrooms.

        Toss to Coat: Toss the vegetables thoroughly until they are evenly coated with the garlic oil mixture.

          Spread on Baking Sheet: Transfer the coated vegetables to a large baking sheet in a single layer to ensure even roasting.

            Roast in Oven: Roast in the preheated oven for about 25-30 minutes, stirring halfway through, until the cauliflower is tender and golden, and the mushrooms are caramelized.

              Finishing Touches: Once out of the oven, sprinkle with fresh parsley and lemon zest for a bright finish.

                Serve: Transfer to a serving dish and enjoy warm as a side dish or main course!
