1 pound large shrimp, peeled and deveined

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 small red bell pepper, sliced

1 cup pineapple chunks (fresh or canned)

2 tablespoons soy sauce (or coconut aminos)

1 tablespoon honey

1 tablespoon lime juice

¼ teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 green onions, chopped (for garnish)

Cooked jasmine rice (for serving)

Instructions

Rinse the shrimp under cold water and pat them dry with paper towels. Season with salt and pepper.

In a large skillet, melt the butter over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.

Add in the sliced red bell pepper and cook for another 2-3 minutes until it starts to soften.

Increase the heat to medium-high and add the seasoned shrimp to the skillet. Cook for about 2-3 minutes on each side until they turn pink and opaque.

Stir in the pineapple chunks, soy sauce, honey, lime juice, and red pepper flakes (if using). Cook for an additional 3-4 minutes, allowing the flavors to meld together.

Remove from heat and taste; adjust seasoning with more salt, pepper, or lime juice as desired.
