1 lb chicken tenders

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably panko)

1/2 cup grated Parmesan cheese

4 cloves garlic, minced

1 teaspoon Italian seasoning

1 teaspoon paprika

Salt and pepper to taste

1/2 cup mayonnaise

2 tablespoons lemon juice

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    In a shallow dish, combine flour, Italian seasoning, paprika, salt, and pepper. Mix well.

      In a separate bowl, whisk the eggs until they are well combined.

        In a third bowl, mix together breadcrumbs, grated Parmesan cheese, minced garlic, and a pinch of salt and pepper.

          Take each chicken tender and coat it in the flour mixture, shaking off any excess.

            Dip the floured chicken tender into the beaten eggs, ensuring it’s completely covered.

              Finally, dredge the chicken tender in the breadcrumb mixture, pressing slightly to ensure it sticks. Place the coated tender on the prepared baking sheet. Repeat with all chicken tenders.

                Once all tenders are coated, drizzle a little olive oil over them or spray lightly with cooking spray for extra crispiness.

                  Bake in the preheated oven for 20-25 minutes, or until the chicken tenders are golden brown and cooked through (internal temperature should reach 165°F or 74°C).

                    While the chicken is baking, prepare the dipping sauce by mixing mayonnaise, lemon juice, salt, and pepper in a small bowl.

                      Once the chicken is done, remove it from the oven and let it cool for a few minutes.
