1 lb chicken breast, cut into 1-inch cubes

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

1/2 teaspoon black pepper

1/2 teaspoon salt

1/2 cup grated Parmesan cheese

1 tablespoon chopped fresh parsley (for garnish)

Instructions
 

Marinate the Chicken: In a large bowl, whisk together the olive oil, minced garlic, dried oregano, garlic powder, onion powder, paprika, black pepper, and salt. Add the cubed chicken and toss to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more intense flavor.

    Preheat Grill: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Preheat your grill (or grill pan) to medium-high heat.

      Assemble the Skewers: Thread the marinated chicken onto the skewers, leaving a little space between each piece for even cooking.

        Cook the Skewers: Place the skewers on the preheated grill. Cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

          Add Parmesan: During the last couple of minutes of cooking, sprinkle the grated Parmesan cheese over the skewers, allowing it to melt slightly.

            Serve: Remove the skewers from the grill and transfer them to a serving platter. Garnish with chopped fresh parsley for a pop of color and freshness.
