Ingredients

1 pound ground chicken

1 cup breadcrumbs (preferably whole wheat)

1/2 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

2 cloves garlic, minced

1 small onion, finely chopped

1 large egg

1/4 cup milk

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

1/4 cup ketchup (for topping)

1 tablespoon fresh basil, chopped (for garnish)

Instructions

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

In a large mixing bowl, combine ground chicken, breadcrumbs, grated Parmesan cheese, parsley, minced garlic, chopped onion, egg, milk, Italian seasoning, salt, black pepper, and red pepper flakes if using.

Using your hands or a spatula, mix until all ingredients are well incorporated but do not overmix.

Divide the mixture into equal portions (about 4-6, depending on desired size) and form each portion into a small loaf shape.

Place the meatloaves on the prepared baking sheet, spaced apart to allow for even cooking.

Spread a thin layer of ketchup on the top of each meatloaf for added flavor and moisture.

Bake in the preheated oven for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).

Once cooked, remove from the oven and let the meatloaves rest for about 5 minutes before serving.

Garnish with fresh basil before serving.
