4 bone-in, skin-on chicken thighs

1 pound baby potatoes, halved

1 tablespoon olive oil

4 cloves garlic, minced

1 teaspoon Italian seasoning

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

½ cup grated Parmesan cheese

1 tablespoon fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare Ingredients: In a large mixing bowl, combine the halved baby potatoes, olive oil, minced garlic, Italian seasoning, paprika, salt, and pepper. Toss well to coat.

      Arrange Chicken and Potatoes: In a large, oven-safe baking dish, arrange the seasoned potatoes in a single layer. Place the chicken thighs skin-side up on top of the potatoes.

        Season Chicken: Sprinkle the chicken thighs generously with more salt, pepper, and half of the grated Parmesan cheese.

          Bake: Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through (internal temperature should reach 165°F / 74°C) and the skin is crispy, and the potatoes are tender.

            Add Remaining Cheese: In the last 5 minutes of baking, sprinkle the remaining Parmesan cheese over the chicken and potatoes and return to the oven to melt and slightly brown.

              Garnish and Serve: Remove from the oven and let it sit for a few minutes. Garnish with fresh parsley and serve with lemon wedges for a zesty finish.
