3 large Yukon Gold potatoes, peeled and thinly sliced

2 tablespoons olive oil

2 cloves garlic, minced

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh thyme, finely chopped

1 teaspoon sea salt, or to taste

1/2 teaspoon black pepper

1/2 cup grated Parmesan cheese

1/4 cup heavy cream

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C) and lightly grease a muffin pan with olive oil or non-stick spray.

    In a large mixing bowl, combine the thinly sliced potatoes, olive oil, minced garlic, chopped rosemary, chopped thyme, sea salt, and black pepper. Toss until the potatoes are well coated in the herb mixture.

      Take a muffin pan and start layering the potato slices vertically, pressing them down gently to create a tight spiral pattern. Each muffin cup should be filled to the top with the potato mixture, packing them in firmly.

        In a separate bowl, whisk together the grated Parmesan cheese and heavy cream until well combined. Carefully pour this mixture evenly over the potato stacks in each muffin cup, allowing it to seep through the layers.

          Place the muffin pan in the preheated oven and bake for 30-35 minutes, or until the potatoes are tender and the tops are golden brown. You can check for doneness by inserting a fork into the center of one galette; it should pierce easily.

            Once baked, remove the muffin pan from the oven and allow the galettes to cool for about 5 minutes. Use a spoon or small knife to gently loosen the edges and carefully remove each galette from the muffin cups.
