2 cups garlic cloves, peeled

1 cup olive oil (extra virgin for best flavor)

2-3 sprigs fresh thyme

1 teaspoon red pepper flakes (optional, for a little heat)

Salt, to taste

Freshly ground black pepper, to taste

Instructions
 

Begin by preheating your oven to 250°F (120°C).

    In a medium oven-safe dish, spread the peeled garlic cloves evenly across the bottom.

      Pour in the olive oil until the garlic is fully submerged. If necessary, add more oil to cover the cloves completely.

        Tuck in the fresh thyme sprigs and sprinkle red pepper flakes over the top if you like a spicy kick.

          Season with salt and freshly ground black pepper.

            Cover the dish with aluminum foil or a lid to trap moisture and flavor, then place it in the preheated oven.

              Allow the garlic to bake gently for about 1.5 to 2 hours. You’ll know it's done when the garlic cloves are soft, tender, and lightly golden.
