Ingredients

For the Garlic Butter Steak Bites:

1 pound sirloin steak, cut into bite-sized pieces

4 tablespoons unsalted butter

3 cloves garlic, minced

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

For the Crispy Cheddar Smashed Potatoes:

1 lb baby potatoes (or Yukon Gold)

1 tablespoon olive oil

1 teaspoon garlic powder

1 cup shredded sharp cheddar cheese

Salt and pepper to taste

Chives, chopped (for garnish)

Instructions

Prepare Potatoes:

    - Begin by preheating your oven to 425°F (220°C).

      - Place the baby potatoes in a large pot of salted water. Bring to a boil and cook for about 15-20 minutes or until fork-tender. Drain and let them cool slightly.

        Smash and Season Potatoes:

          - Line a baking sheet with parchment paper. Once the potatoes are cool enough to handle, use a fork or the bottom of a glass to gently smash each potato until they’re about 1/2 inch thick.

            - Drizzle the smashed potatoes with olive oil, garlic powder, salt, and pepper. Top each potato with the shredded cheddar cheese.

              Bake Potatoes:

                - Bake in the preheated oven for 20-25 minutes or until the edges are crispy and the cheese is bubbly and golden.

                  Cook Steak Bites:

                    - While the potatoes are baking, heat a large skillet over medium-high heat. Add 2 tablespoons of butter.

                      - Once the butter is melted and bubbly, add the steak bites in a single layer, making sure not to overcrowd the pan. Cook for about 2-3 minutes per side until browned and cooked to your desired doneness.

                        Add Garlic Butter:

                          - Once the steak bites are cooked, reduce the heat to medium and add the remaining 2 tablespoons of butter, minced garlic, and thyme to the skillet.

                            - Toss the steak bites in the garlic butter for about 1-2 minutes, allowing the flavors to meld. Season with salt and pepper to taste.

                              Serve:

                                - Serve the garlic butter steak bites immediately, garnished with chopped parsley, alongside the crispy cheddar smashed potatoes. Optionally, garnish the potatoes with chopped chives.
