Ingredients

1 pound sirloin steak, cut into bite-sized cubes

4 medium Yukon gold potatoes, diced into small cubes

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

Fresh parsley, chopped (for garnish)

Olive oil (for drizzling)

Instructions

Prepare the Potatoes: Preheat your oven to 425°F (220°C). Toss the diced potatoes in a bowl with olive oil, salt, smoked paprika, and pepper. Spread them in a single layer on a baking sheet.

Roast the Potatoes: Bake the potatoes in the preheated oven for about 25-30 minutes, turning once halfway through, until they are crispy and golden brown.

Cook the Steak Bites: In a large skillet, melt 2 tablespoons of butter over medium-high heat. Season the steak cubes with salt, black pepper, and dried thyme. Once the butter is bubbling, add the steak bites.

Sear the Steak: Cook the steak bites for about 2-3 minutes on each side for medium-rare, or until they reach your desired doneness. Remove the steak bites from the skillet and set aside.

Make the Garlic Butter: In the same hot skillet, add the remaining 2 tablespoons of butter and minced garlic. Sauté for about 1-2 minutes until fragrant and the garlic starts to turn golden.

Combine: Return the cooked steak bites to the skillet and toss them in the garlic butter, ensuring the bites are well coated.

Serve: Once the potatoes are crispy and golden, remove them from the oven. Plate the garlic butter steak bites alongside the crispy potatoes.

                - Garnish & Presentation Tips: Sprinkle chopped fresh parsley over the steak bites for a pop of color. Serve the dish on a large platter, with lemon wedges on the side for an added burst of freshness.
