Ingredients

1 lb sirloin steak, cut into 1-inch cubes

1 lb baby potatoes, halved

4 tbsp unsalted butter

4 cloves garlic, minced

1 tsp dried thyme

1 tsp paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Olive oil, for drizzling

Instructions

Prep the Potatoes: Preheat your oven to 400°F (200°C). In a large bowl, toss the halved baby potatoes with olive oil, salt, pepper, and paprika. Spread them out in a single layer on a baking sheet.

Roast the Potatoes: Roast the potatoes in the preheated oven for about 25-30 minutes, or until they are golden brown and crispy, flipping halfway through for even cooking.

Cook the Steak Bites: While the potatoes are roasting, heat a large skillet over medium-high heat. Add 2 tablespoons of butter. When melted, add the cubed steak, seasoning with salt, pepper, and dried thyme. Cook for 2-3 minutes per side, or until browned and cooked to your desired doneness.

Add Garlic Butter: Reduce heat to medium, add the remaining 2 tablespoons of butter and minced garlic to the skillet. Sauté together for 1-2 minutes, letting the garlic become fragrant without burning.

Combine: Once both the steak bites and potatoes are done, combine them in the skillet. Gently toss to coat with the garlic butter, bringing everything together.

Serve: Remove from heat, garnish with chopped fresh parsley, and serve hot!
