1 lb sirloin steak, cut into bite-sized pieces

3 tbsp unsalted butter, divided

4 cloves garlic, minced

1 tsp fresh rosemary, chopped (or ½ tsp dried)

1 tsp fresh thyme, chopped (or ½ tsp dried)

Salt and freshly ground black pepper, to taste

1 lb baby potatoes, halved

2 tbsp olive oil

1 tsp paprika

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Potatoes: In a mixing bowl, toss the halved baby potatoes with olive oil, paprika, salt, and pepper until well coated. Spread them out on a baking sheet in a single layer.

      Bake the Potatoes: Place the baking sheet in the preheated oven and bake the potatoes for 25-30 minutes or until they are golden brown and crispy, turning them halfway through for even cooking.

        Cook the Steak Bites: While the potatoes are baking, heat 1 tablespoon of butter in a large skillet over medium-high heat. Season the steak pieces with salt and pepper.

          Sear the Steak: Once the skillet is hot, add the steak bites in a single layer (you may need to do this in batches to avoid overcrowding). Sear for 2-3 minutes on each side or until browned and cooked to your desired doneness.

            Add Garlic and Herbs: Reduce the heat to medium. When the steak bits are almost done, add the remaining 2 tablespoons of butter, minced garlic, rosemary, and thyme to the skillet. Stir to combine and cook for an additional minute until the garlic is fragrant.
