Ingredients

1 lb sirloin steak, cut into 1-inch cubes

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper, to taste

1 lb baby potatoes, boiled and cooled

½ cup shredded cheddar cheese

2 tablespoons sour cream (optional)

Fresh parsley, chopped for garnish

Instructions

Prepare the Potatoes: Boil baby potatoes in salted water until fork-tender, about 15-20 minutes. Drain and allow them to cool slightly.

Smash the Potatoes: On a clean surface, gently smash each potato using the bottom of a glass or your palm, keeping them about ½ inch thick.

Cheese Mixture: Preheat your oven to 400°F (200°C). Place the smashed potatoes on a parchment-lined baking sheet. Sprinkle shredded cheddar cheese over each potato. Bake for 15 minutes, or until golden and crispy.

Cook the Steak Bites: While the potatoes are baking, heat a large skillet over medium-high heat. Add the butter and let it melt.

Add Garlic and Herbs: Once the butter is melted, add minced garlic and thyme, stirring for about 30 seconds until fragrant.

Cook the Steak: Add the steak cubes to the skillet in a single layer. Season with salt and pepper. Sear for about 2-3 minutes per side for medium-rare (adjust time for desired doneness).

Mix and Coat: Once cooked to your liking, reduce the heat and toss the steak bites in the garlic butter until well-coated, about 1 minute.

Final Touch: Remove the smashed potatoes from the oven. Serve the garlic butter steak bites over the cheesy smashed potatoes. Optionally, drizzle with sour cream and garnish with fresh chopped parsley.
