8 large shrimp, peeled and deveined

2 tablespoons unsalted butter

3 cloves garlic, minced

1/2 teaspoon smoked paprika

Salt and pepper to taste

4 slices of sourdough bread

1 cup shredded cheddar cheese

1/2 cup cream cheese, softened

Fresh parsley, chopped (for garnish)

Instructions
 

In a skillet, melt the butter over medium heat. Once melted, add the minced garlic and sauté for about 1 minute until fragrant.

    Add the shrimp to the skillet, sprinkle with smoked paprika, salt, and pepper. Cook for 2-3 minutes on each side, or until the shrimp are pink and opaque. Remove from heat and set aside.

      Spread a thin layer of cream cheese on one side of each slice of sourdough bread.

        On the non-cream cheese side, add a generous amount of shredded cheddar cheese. Top with the garlic butter shrimp, then cover with another slice of bread, cream cheese side facing down.

          In the same skillet over medium heat, add a little more butter if necessary. Grill the sandwich for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.

            Once done, remove the sandwich from the skillet and let it sit for a minute before slicing.

              Garnish with fresh parsley before serving.
