4 salmon fillets (6 oz each)

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon dried thyme

Salt and pepper to taste

1 can (15 oz) cannellini beans, rinsed and drained

1 lemon, juiced and zested

2 cups fresh spinach (optional)

Fresh parsley, chopped for garnish

Instructions
 

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Prepare the salmon: Place the salmon fillets on the prepared baking sheet. In a small saucepan, melt 2 tablespoons of butter over medium heat. Add minced garlic and dried thyme, cooking until fragrant (about 1 minute).

      Butter the salmon: Pour the garlic butter mixture over the salmon fillets, ensuring they are well-coated. Season with salt and pepper.

        Bake the salmon: Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

          Cook the white beans: While the salmon is baking, heat the remaining 2 tablespoons of butter in a skillet over medium heat. Add the drained cannellini beans and a splash of water. Stir gently for about 5 minutes until heated through.

            Add lemon flavor: Squeeze the fresh lemon juice over the beans, add the lemon zest, and stir to combine. If using, add the fresh spinach at this point to wilt in the heat. Cook for another 1-2 minutes until the spinach is tender.

              Plate the dish: Once the salmon is cooked, remove it from the oven. Serve the salmon alongside a generous scoop of lemon white beans on the plate.

                Garnish and serve: Sprinkle fresh parsley over the top for a burst of color and flavor.
