4 bone-in pork chops (about 1-inch thick)

Salt and pepper, to taste

2 tablespoons olive oil

4 cloves garlic, minced

1/2 cup unsalted butter (1 stick)

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon fresh parsley, chopped (for garnish)

1 tablespoon lemon juice (optional, for brightness)

Instructions
 

Prepare the Pork Chops:

    - Pat the pork chops dry with paper towels to ensure a good sear. Season both sides generously with salt and pepper.

      Heat the Pan:

        - In a large skillet over medium-high heat, add the olive oil. Allow it to heat until shimmering but not smoking.

          Sear the Pork Chops:

            - Carefully place the pork chops in the skillet. Sear for 4-5 minutes on one side, without moving them, until a golden crust forms. Flip the chops and cook for another 4-5 minutes, or until the pork reaches an internal temperature of 145°F (63°C).

              Make the Garlic Butter:

                - Once the pork chops are cooked, remove them from the skillet and set aside to rest. In the same skillet, reduce the heat to medium. Add the minced garlic and sauté for about 30 seconds or until fragrant, being careful not to burn it.

                  Add the Butter and Herbs:

                    - Add the butter to the skillet and let it melt, swirling the pan to combine with the garlic. Stir in the fresh thyme and lemon juice (if using) for added flavor.

                      Finish the Pork Chops:

                        - Return the pork chops to the skillet and spoon the garlic butter over them for 1-2 minutes, allowing the chops to absorb the flavors.

                          Serve:
