Ingredients

1 French baguette, sliced into 1/2-inch pieces

1 cup ripe garden tomatoes, chopped (heirloom or cherry work great)

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon dried oregano

1 tablespoon balsamic vinegar

1 teaspoon extra virgin olive oil

1 cup feta cheese, crumbled

1/2 cup cream cheese, softened

1 tablespoon fresh lemon juice

Fresh basil leaves for garnish

Instructions

Preheat your oven to 400°F (200°C).

Arrange the sliced baguette pieces on a baking sheet and lightly brush one side with olive oil.

Bake the bread slices for about 8-10 minutes or until they are golden brown and crisp. Let them cool slightly.

In a mixing bowl, combine the chopped garden tomatoes with salt, black pepper, dried oregano, balsamic vinegar, and olive oil. Toss gently to coat and set aside to marinate for about 10 minutes.

In another bowl, combine the crumbled feta cheese, softened cream cheese, and lemon juice. Use a hand mixer or a fork to whip them together until the mixture is light and fluffy.

To assemble the crostini, spread a generous amount of the whipped feta mixture on each toasted bread slice.

Top the whipped feta with a spoonful of the marinated tomato mixture.

Garnish each crostini with fresh basil leaves.
