1 tablespoon cumin seeds

1 tablespoon coriander seeds

1 tablespoon black peppercorns

1 teaspoon cloves

1 teaspoon cardamom pods (green or black)

1 cinnamon stick (2 inches)

½ teaspoon nutmeg, freshly grated

2 dried bay leaves

Instructions
 

Start by toasting the cumin seeds, coriander seeds, black peppercorns, cloves, cardamom pods, and cinnamon stick in a dry skillet over medium heat. Stir frequently for about 3-5 minutes, or until they start to become fragrant. Be careful not to burn them.

    Remove the spices from the skillet and let them cool for a few minutes.

      Once cooled, place the toasted spices along with the grated nutmeg and bay leaves in a spice grinder or mortar and pestle.

        Grind the mixture to a fine powder, ensuring that it is well combined.

          Store the ground garam masala in an airtight container in a cool, dark place for up to 3 months.
