Ingredients
  

8 slices of thick bread (like brioche or Texas toast)

1 cup cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup fresh strawberries, hulled and sliced

1 teaspoon lemon juice

1 cup crushed graham crackers

1 egg

1/2 cup milk

1 teaspoon cinnamon

Oil for frying (canola or vegetable oil)

Fresh mint leaves for garnish (optional)

Instructions
 

In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat until smooth and well blended.

    In another bowl, toss the sliced strawberries with lemon juice and set aside to marinate for about 10 minutes.

      Take 4 slices of bread and spread a generous amount of the cream cheese mixture on each slice. Top with the marinated strawberries, making sure to distribute them evenly.

        Place the remaining 4 slices of bread on top to create a sandwich and press down gently to seal.

          In a shallow dish, whisk together the egg and milk until well combined. In another shallow dish, mix the crushed graham crackers and cinnamon.

            Heat oil in a large skillet over medium heat. Once hot, dip each sandwich into the egg mixture first, coating both sides, then dredge in the graham cracker mixture until fully coated.

              Carefully place the sandwiches into the heated oil and fry until golden brown on both sides, about 3-4 minutes per side. You may need to do this in batches to avoid overcrowding the pan.

                Once fried, remove the sandwiches and place them on a paper towel-lined plate to drain any excess oil.

                  Slice each sandwich in half and serve warm, garnished with fresh mint leaves if desired.
