1 cup all-purpose flour

1/2 cup cornstarch

1/4 cup shredded coconut (sweetened or unsweetened)

1/4 cup brown sugar

Start by preparing the pineapple rings. If not done already, peel the pineapple and cut it into 1/2-inch thick rings. Ensure to remove the core for a more enjoyable eating experience.

    In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, cinnamon, and salt. Whisk together until well incorporated.

      Gradually add the coconut milk and water to the dry ingredients, whisking until you have a smooth batter. The consistency should be similar to pancake batter; add a little more water if needed.

        Once the batter is ready, gently fold in the shredded coconut and brown sugar. This will add a delightful texture and sweetness to the fried rings.
