4 cod fillets (fresh or thawed)

1 cup all-purpose flour

1 tsp paprika

1 tsp garlic powder

1/2 tsp salt

1/2 tsp black pepper

1 cup buttermilk

1 cup cornmeal

Oil for frying (vegetable or canola)

4 brioche buns (or your choice of bread)

1 cup shredded lettuce

1 large tomato, sliced

1/2 cup tartar sauce (store-bought or homemade)

Lemon wedges (for serving)

Prep the Cod: Rinse the cod fillets under cold water and pat them dry with paper towels. This helps the batter stick better.

    Prepare the Breading Stations: In one bowl, combine the flour, paprika, garlic powder, salt, and pepper. In a second bowl, pour the buttermilk. In a third bowl, place the cornmeal.

      Breading the Fish: Dip each cod fillet first into the flour mixture, making sure to coat it fully. Shake off the excess flour, then dip it into the buttermilk, allowing any excess to drip off. Finally, roll the fillet in the cornmeal, pressing gently to make sure it adheres well.

        Heat the Oil: In a deep skillet or frying pan, heat about 1 inch of oil over medium-high heat until it reaches 350°F (175°C). You can test if the oil is ready by dropping a small piece of batter into it; if it sizzles, it’s good to go.

          Fry the Cod: Carefully add the breaded cod fillets to the hot oil, working in batches if necessary to avoid overcrowding the pan. Fry for about 3-4 minutes on each side until golden brown and cooked through. The fish should be flaky and an internal temperature of 145°F (63°C) is considered safe.

            Drain: Once cooked, remove the fish from the oil and place them on a plate lined with paper towels to drain excess oil.

              Assemble the Sandwiches: Spread a generous amount of tartar sauce on the bottom half of each brioche bun. Layer on some shredded lettuce and a slice of tomato. Place a fried cod fillet on top, then add the top half of the bun.
