2 cups fresh strawberries, hulled and halved

1 cup Greek yogurt (plain or vanilla)

2 tablespoons honey (or maple syrup)

1 teaspoon vanilla extract

1 cup granola (crunchy, your choice)

Fresh mint leaves for garnish

Optional: A sprinkle of cinnamon or nutmeg

In a large mixing bowl, combine the halved strawberries with honey and vanilla extract. Gently toss them to coat and set aside to marinate for about 10 minutes, allowing the strawberries to release their juices.

    In a separate bowl, stir together the Greek yogurt and a pinch of salt to balance the sweetness. If you prefer a sweeter yogurt, you can mix in a little more honey or maple syrup at this stage.
