1 lb flank steak, pounded thin

2 medium onions, thinly sliced

2 tablespoons unsalted butter

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon dried thyme

½ teaspoon salt

½ teaspoon black pepper

1 cup shredded Gruyère cheese

Fresh parsley for garnish (optional)

Kitchen twine or toothpicks

Prepare the Caramelized Onions: In a large skillet, heat the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until golden brown and caramelized, about 20-25 minutes. Season with garlic powder, thyme, salt, and pepper. Remove from heat and let cool slightly.

    Prepare the Flank Steak: Lay the pounded flank steak out on a cutting board. Season both sides with a sprinkle of salt and pepper.

      Assemble the Pinwheels: Spread the caramelized onion mixture evenly over the surface of the steak. Sprinkle the Gruyère cheese on top of the onions, ensuring an even layer.
