1 lb flank steak, pounded thin

2 medium onions, thinly sliced

2 tablespoons unsalted butter

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon dried thyme

½ teaspoon salt

½ teaspoon black pepper

1 cup shredded Gruyère cheese

Fresh parsley for garnish (optional)

Kitchen twine or toothpicks

Prepare the Caramelized Onions: In a large skillet, heat the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until golden brown and caramelized, about 20-25 minutes. Season with garlic powder, thyme, salt, and pepper. Remove from heat and let cool slightly.

    Prepare the Flank Steak: Lay the pounded flank steak out on a cutting board. Season both sides with a sprinkle of salt and pepper.

      Assemble the Pinwheels: Spread the caramelized onion mixture evenly over the surface of the steak. Sprinkle the Gruyère cheese on top of the onions, ensuring an even layer.

        Roll It Up: Starting from one end, carefully roll the flank steak into a tight cylinder. Use kitchen twine to tie the roll at 1-inch intervals or secure it with toothpicks.

          Cook the Pinwheels: Preheat your grill or a skillet over medium-high heat. Sear the pinwheel on all sides, about 3-4 minutes per side, until the steak is cooked to your desired doneness (medium-rare is about 135°F).

            Rest and Slice: Remove the pinwheels from heat and let them rest for 5 minutes. Carefully remove the twine or toothpicks, then slice the pinwheel into 1-inch thick pieces.

              Serve: Arrange the pinwheels on a serving platter, garnishing with fresh parsley if desired.
