French Onion Soup Rice

1 cup Arborio rice

4 large onions, thinly sliced

4 cups low-sodium beef broth

1 tablespoon olive oil

1 tablespoon butter

2 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 bay leaf

Salt and pepper to taste

1 cup shredded Gruyère cheese

Fresh parsley for garnish

Caramelize the Onions: In a large pot, heat the olive oil and butter over medium heat. Add the thinly sliced onions and a pinch of salt. Cook for about 20-25 minutes, stirring frequently, until the onions are soft and caramelized to a deep golden brown.

    Add Garlic and Rice: Once the onions are caramelized, stir in the minced garlic and cook for an additional minute until fragrant. Add the Arborio rice, stirring to coat the rice in the onion mixture.

      Incorporate Broth: Add the beef broth, thyme, and bay leaf to the pot. Bring the mixture to a gentle simmer. Reduce the heat to low, cover the pot, and let it cook for about 18-20 minutes, or until the rice is creamy and al dente. Stir occasionally to prevent sticking.

        Season the Rice: After the rice is cooked, remove the bay leaf. Taste and season with salt and pepper as needed.

          Melt the Cheese: Stir in half of the shredded Gruyère cheese into the rice mixture until melted and creamy. Reserve the other half for topping.

            Prepare to Serve: Spoon the rice into serving bowls. Top each bowl generously with the remaining shredded Gruyère cheese. Optionally, place the bowls under a broiler for 2-3 minutes to melt and slightly brown the cheese for a crispy top.
