Ingredients

1 cup sour cream

1 cup cream cheese, softened

1/2 cup mayonnaise

1 cup caramelized onions (about 2 medium onions)

1/2 cup dill pickles, finely chopped

1 tablespoon pickle juice

1 teaspoon garlic powder

1 tablespoon fresh parsley, chopped (plus more for garnish)

Salt and pepper to taste

Instructions

Caramelize the Onions: In a skillet over medium heat, melt a tablespoon of butter. Add thinly sliced onions and a pinch of salt. Stir occasionally, cooking until they are golden brown and caramelized (about 20-25 minutes). Remove from heat and let cool.

Mix the Base: In a large mixing bowl, combine the softened cream cheese, sour cream, and mayonnaise. Use a hand mixer or a whisk to blend until smooth and creamy.

Add Flavor: Stir in the cooled caramelized onions, finely chopped dill pickles, pickle juice, garlic powder, and chopped parsley. Mix well to combine all ingredients evenly.

Season: Taste the dip and season with salt and pepper to your liking. Adjust the dill pickle quantity if you prefer a stronger pickle flavor.

Chill: Cover the dip and let it chill in the refrigerator for at least 1 hour to allow the flavors to meld together.

Serve: Right before serving, stir the dip again and garnish with additional chopped parsley on top. Serve with an assortment of crackers, sliced baguette, or vegetable sticks.
