1 lb ground beef

1 lb ground pork

1 large onion, finely chopped

2 cloves garlic, minced

1 cup French onion soup (canned or homemade)

1 cup breadcrumbs

2 large eggs

1 tsp Worcestershire sauce

1/2 tsp dried thyme

1/2 tsp black pepper

1 tsp salt

1 cup shredded Gruyère cheese

Fresh parsley for garnish (optional)

Preheat Oven: Preheat your oven to 350°F (175°C).

    Sauté Onions: In a skillet over medium heat, add a drizzle of olive oil and sauté the chopped onion until golden brown and caramelized, about 10-12 minutes. Add the minced garlic in the last 2 minutes of cooking, then remove from heat and let cool slightly.

      Combine Meat Mixture: In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, Worcestershire sauce, eggs, salt, pepper, and dried thyme. Mix well until fully incorporated.

        Add Soup and Onions: Fold in the caramelized onions and garlic mixture along with the French onion soup and half of the Gruyère cheese. Mix gently until well combined, being careful not to overwork the meat.

          Shape the Meatloaf: Transfer the meat mixture into a loaf pan or shape it into a loaf on a lined baking sheet.

            Top with Cheese: Sprinkle the remaining Gruyère cheese on top of the meatloaf.

              Bake: Place the meatloaf in the preheated oven and bake for about 1 hour, or until the internal temperature reaches 160°F (70°C).

                Let It Rest: Once cooked, remove from the oven and let the meatloaf rest for 10 minutes before slicing to retain its juices.

                  Serve: Slice and serve warm, garnished with fresh parsley if desired.
