9 lasagna noodles

2 tablespoons olive oil

2 large onions, thinly sliced

2 teaspoons sugar

3 cloves garlic, minced

1 cup beef broth (or vegetable broth)

1 teaspoon thyme

Salt and pepper to taste

1 cup ricotta cheese

1 ½ cups shredded mozzarella cheese, divided

½ cup grated Parmesan cheese

2 cups spinach, wilted

Fresh parsley, for garnish

Instructions
 

Cook the Lasagna Noodles: Boil lasagna noodles according to package instructions until al dente. Drain and lay them flat on a clean kitchen towel to cool.

    Caramelize the Onions: In a large skillet, heat olive oil over medium heat. Add sliced onions and sprinkle with sugar. Cook for about 15-20 minutes, stirring frequently, until the onions are caramelized and golden brown. Add minced garlic and cook for an additional 1-2 minutes.

      Deglaze and Season: Pour in the beef broth and add thyme. Let it simmer for about 5 minutes, allowing the flavors to meld. Season with salt and pepper. Remove from heat.

        Prepare the Filling: In a mixing bowl, combine ricotta cheese, 1 cup of mozzarella cheese, and wilted spinach. Mix well to create a creamy filling.

          Assemble the Roll-Ups: Spoon a layer of the caramelized onion mixture into a baking dish, spreading it evenly. Take a lasagna noodle and spread about 2-3 tablespoons of the ricotta mixture along the length of it. Roll the noodle tightly and place it seam-side down in the baking dish. Repeat with remaining noodles.

            Top and Bake: Pour the remaining caramelized onion mixture over the lasagna rolls. Sprinkle with the remaining mozzarella and Parmesan cheese. Cover the baking dish with foil and bake at 375°F (190°C) for 25 minutes. Remove the foil and bake for another 10-15 minutes until cheese is bubbly and golden.

              Garnish and Serve: Let the dish cool for a few minutes before serving. Garnish with fresh parsley for added color and flavor.
