1 lb ground beef (80/20 blend for juiciness)

1 large onion, thinly sliced

2 tablespoons butter

1 tablespoon olive oil

1 teaspoon balsamic vinegar

1 teaspoon sugar

Salt and pepper, to taste

4 slices Gruyère cheese (or Swiss cheese)

4 burger buns, preferably brioche

Fresh thyme leaves, for garnish (optional)

Instructions
 

Caramelize the Onions: In a large skillet, heat the butter and olive oil over medium heat. Add the sliced onions and sprinkle with salt. Cook for about 15 minutes, stirring occasionally until they are soft and golden brown. Add the sugar and balsamic vinegar, then continue cooking for another 5-10 minutes until the onions are deeply caramelized. Remove from heat and set aside.

    Prepare the Burgers: While the onions are cooking, divide the ground beef into four equal patties. Season both sides with salt and pepper. Make a small indentation in the center of each patty to prevent it from puffing up during cooking.

      Cook the Burgers: In a separate skillet or grill, cook the patties over medium-high heat for about 4-5 minutes on one side. Flip the burgers, then add a slice of Gruyère cheese on top of each patty. Cook for an additional 3-4 minutes or until the cheese is melted and the burger is cooked to your desired doneness (internal temperature of 160°F for medium).
