1 lb thinly sliced beef (flank steak or sirloin)

2 large onions, thinly sliced

2 cloves garlic, minced

1 cup beef broth

1 cup shredded Gruyère cheese

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

2 tablespoons olive oil

2 tablespoons balsamic vinegar

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Onions: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, for about 20–25 minutes until the onions are caramelized and golden brown. Add the minced garlic and cook for an additional 2 minutes until fragrant. Set aside.

    Prepare the Beef: Lay the slices of beef out on a clean surface. Season each slice with salt, pepper, and thyme.

      Assemble the Roll-Ups: Place a portion of the caramelized onions and a sprinkle of Gruyère cheese at one end of each beef slice. Carefully roll the beef around the filling and secure with toothpicks or kitchen twine.

        Sear the Roll-Ups: In the same skillet, add the remaining tablespoon of olive oil over medium-high heat. Once hot, add the beef roll-ups seam side down. Sear for about 2-3 minutes on each side until browned.

          Prepare the Sauce: Add the beef broth and balsamic vinegar to the skillet. Bring it to a simmer, scraping up any browned bits from the bottom of the pan. Allow it to cook for about 5 minutes until slightly reduced.

            Finish Cooking: Lower the heat, place a lid over the skillet, and let the roll-ups simmer in the broth for another 10-15 minutes until fully cooked through.

              Serve: Carefully remove the roll-ups from the skillet. Drizzle with the broth sauce, sprinkle additional Gruyère cheese on top, and garnish with fresh parsley. Serve hot.
