8 large flour tortillas

8 large eggs

1 cup shredded cheese (cheddar or a blend)

2 cups diced cooked potatoes (frozen hash browns work well)

1 cup cooked and crumbled breakfast sausage or 1 can of black beans (for a vegetarian option)

1 red bell pepper, diced

1 green bell pepper, diced

1 small onion, finely chopped

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Instructions
 

In a large skillet over medium heat, add the chopped onion and bell peppers. Sauté for about 3-4 minutes until softened.

    Add the cooked potatoes to the skillet, along with garlic powder, paprika, salt, and pepper. Continue to cook for another 5 minutes, stirring occasionally.

      In a large mixing bowl, whisk together the eggs. Pour the eggs into the skillet, stirring gently until they are fully cooked, about 4-5 minutes.

        Stir in the cooked sausage or black beans and half of the shredded cheese into the egg mixture, allowing it to melt slightly. Remove from heat.

          Lay a tortilla flat on a clean surface. Spoon a generous portion of the breakfast mixture onto the center of the tortilla.

            Top with a sprinkle of the remaining cheese. Fold in the sides, then roll the tortilla tightly from the bottom up to create a burrito. Repeat with the remaining tortillas.

              Wrap each burrito in aluminum foil or plastic wrap, then place them into a freezer-safe bag or container.

                Label the bags with the date and place them in the freezer.
