Ingredients
  

4 everything bagels, sliced and toasted

4 slices of bacon

4 breakfast sausages, cooked and sliced

4 slices of smoked ham

4 ounces of chorizo, cooked and crumbled

4 slices of cheddar cheese

4 slices of pepper jack cheese

4 slices of mozzarella cheese

4 slices of cream cheese (softened)

4 large eggs

Salt and pepper to taste

Fresh chives or scallions, chopped (for garnish)

Butter (for frying)

Instructions
 

Prepare the Meats: In a skillet, cook the bacon until crispy, then set aside on paper towels to drain. In the same skillet, quickly fry the sliced breakfast sausages until browned. Warm the sliced smoked ham and chorizo in the pan until heated through.

    Cook the Eggs: In a clean skillet, melt a little butter over medium heat. Crack in the eggs, season with salt and pepper, and fry to your preference (sunny-side-up or over-easy).

      Assemble the Sandwiches:

        - Spread a layer of cream cheese on the bottom half of each toasted bagel.

          - Layer with bacon, sausage, smoked ham, and chorizo.

            - Place a slice of cheddar, pepper jack, and mozzarella cheese on top of the meats.

              - Top each with a fried egg and sprinkle with fresh chives or scallions.

                - Cover with the top half of the bagel.

                  Melt the Cheese (Optional): For an extra cheesy treat, place the assembled sandwich on a skillet and cover with a lid. Cook on low heat for a couple of minutes to melt the cheese, then flip carefully to toast the other side if desired.

                    Serve: Remove from heat, slice in half if desired, and serve warm with your favorite hot sauce or ketchup.
