4 large Yukon Gold potatoes

4 tablespoons unsalted butter

2 tablespoons vegetable oil

2 cups chicken or vegetable broth

3 cloves garlic, smashed

2 sprigs fresh rosemary

Salt and freshly ground black pepper, to taste

Preheat your oven to 400°F (200°C).

    Peel the potatoes and cut off the ends to create a flat surface. Then, cut each potato into a uniform shape about 2 inches thick, resembling cylindrical logs.

      In a large oven-proof skillet, heat the vegetable oil over medium-high heat. Add the potatoes and sear them for about 4-5 minutes on each side until they are golden brown. (Make sure not to overcrowd the skillet; do this in batches if needed.)

        Once the potatoes are nicely browned, remove them from the skillet and set aside. Reduce the heat to medium and add the butter to the same skillet.

          Once the butter has melted, add the smashed garlic and rosemary sprigs to infuse the butter with flavor.

            Nestle the seared potatoes back into the skillet and pour the broth around them, ensuring that the liquid comes about halfway up the sides of the potatoes. Sprinkle with salt and pepper to taste.

              Transfer the skillet to the oven and roast for about 25-30 minutes or until the potatoes are fork-tender and have absorbed some of the broth.

                Once done, remove them from the oven and let them cool for a few minutes.

                  To serve, place two fondant potatoes on each plate and spoon over any remaining broth and garlic from the skillet.
